Sopaipilla Recipe and Tutorial
Sopaipilla Dough
2 cups flour
1 package yeast
1/2 teaspoon salt
1 tablespoon shortening
3/4 cup warm water
Mix all ingredients. Divide dough into 8 balls and roll out each ball to an approximate five inch circle. Place a scant 1/2 cup of filling in the center of the circle. Flip the dough over to ...where it makes a moon shape over the meat & cheese then pinch the ends. Fry about 45 seconds in hot oil and then flip and follow with another 45 seconds on the other side. Drain on paper towels.
Be creative with the fillings! I used 2 cups cooked and chopped chicken. 1 teaspoon granual chicken boullion, 1 teaspoon chopped onion, 1 cup shredded chedder cheese, and 2 cups of pineapple chunks. It was wonderful served with sour cream and additional cheese.
